Recipe of the Month

Since we are stuck at home this yeas so far, we are cooking much more then ever. The following is a standard in our house I want to share.

SPAGHETTI ,FRESH CLAMS,PERSLEY & LEMON

THIS IS A SIMPLE DISH TO COOK. You need 1/2 cup extra-virgin olive oil,8 cloves garlic sliced thin,3 pounds fresh littleneck clams,1/4 cup fresh chopped parsley,1/2 cup dry white eine,1/4 cup fresh lemon juice, one pound spaghetti. HOW TO: heat oil in a large heavy pot over med-high heat. Add sliced garli c and saute' until light brown. about 1 min. Add clams & 1/4 cop parsley,stir 2 min. Add wine,simmer 2 min. add lemon juice. Cover and simmer until clams open, about 6 min. (discard any clams that do not open) Meanwhile ,cook pasta in a large pot of boiling salt water until still firm a bit. Add pasta to open clams and toss to coat. Add salt and pepper to tast. Transfer to large bowl, sprinkle with remaining parsley and serve.
